Spicy Black Bean and Mango Salad

This salad has a delightfully sweet and spicy kick, is full of protein and fibre, and is refreshing. Consider yourself biting into this salad of mango and spicy black beans. Initially, the juicy mango gives you a delicious burst that feels like a tiny amount of sunshine in your mouth. Next is the black beans’ robust, earthy flavour, which is also quite tender and filling.

However, it doesn’t end there! A little wake-up call for your taste buds, the lime dressing gives it a vibrant, zingy vibe. Then you have this great little shock of heat that adds even more interest, depending on how much jalapeño you put in. The tiny pieces of red onion give it a little crunch, and the fresh cilantro gives a lovely herbaceous note. This salad is anything but dull.

Now, your grandmother most likely didn’t make this particular salad back in the day. Mangoes have been popular in Asia for thousands of years, and black beans have long been a staple in regions like Central and South America. Ingredients:

  • 2 ripe mangoes, peeled and diced
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 jalapeño pepper, seeded and minced (adjust to your spice preference)
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon of powdered cumin
  • To taste, fresh black pepper and salt

Instructions:

  1. Gently combine the black beans, red onion, cilantro, and diced mangoes in a medium bowl.
  2.  In a small bowl, whisk together the lime juice, olive oil, minced jalapeño, cumin powder, salt, and pepper.
  3. Pour the dressing over the mango and black bean mixture. Toss gently to evenly coat everything.
  4. Taste and adjust seasoning if needed.
  5. Serve immediately or chill in the refrigerator for later. This salad is great on its own, as a side dish, or as a topping for grilled chicken or fish.
